Hi, Reader, This is one of the busiest times of year for us. The kids are all in several activities. We are often rushing from one to the next, getting home late, and without a break for dinner. Hi, Reader, I know sometimes broccoli gets a bad wrap for being a vegetable that kids (and adults, too) hate, but my kids love it. We eat broccoli at least once a week, usually more. More often than not I simply roast it with a little olive oil, salt, and pepper at 400°F until browned and crispy on the edges. It takes about 25-30 minutes usually, but I start checking at the 15 minute mark and shake the pan every 5 minutes or so after that. Sometimes the broccoli doesn't even hit our plates...

Hi, Reader, April is National Soyfoods Month. Soy foods are rich in protein (all 9 essential amino acids - a complete protein), fiber, B vitamins, calcium, potassium, and more.
